INGREDIENT:
- 400 gram chicken
- 3 large cloves garlic
- 5 large cloves onions
- 2 centimeters turmeric
- 2 centimeters kencur
- 2 centimeters ginger
- 3 centimeters galangal
- 2 stick lemongrass
- 2 slice bay leaves
- 2 slice lime leaves
- 15 seed chili (suit one's taste)
- 400 ml pure water
- 1 liter coconut milk
- 3 tablespoon vegetable oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon pepper+
STEPS:
- Finely crush 3 large cloves garlic, 5 large cloves onions, 2 centimeters turmeric, 2 centimeters kencur, 2 centimeters ginger, and 3 centimeters galangal
- Heat vegetable oil and stir-fry until fragrant all the ground spices
- Add pure water till boiled add 2 stick lemongrass, 2 slice bay leaves, 2 slice lime leaves, and 15 seed chili
- Add the chicken into the water in spices and let the spices water sink into the meat
- Reduce the heat and add a bit of coconut milk and always for stir gently
- For seasoning add 1 teaspoon sugar, 1 teaspoon salt also 1 teaspoon pepper
- Chicken Lodho is done when coconut milk spices seep into the meat
Commonly Lodho served with rice or rice cake and some vegetables that mixed with spicy grated coconut.
