Ingredient:
- 500 grams potatoes
- 5set chicken liver and gizzard
- 70 grams petai
- 50 grams green chili
- Pepper as seasoning
- 1 teaspoon Salt
- 1 spoon sugar
- 1 block chicken broth
- Vegetable oil
- 250 ml water
- 250 ml coconut milk
- 1 piece lemongrass
- 5 bays leaf
- 5 lime leaf
Ground
Spices:
- 7 big clove shallots
- 5 big clove garlic
- 2 candlenuts
- 3 cm ginger
- 2 cm kencur
- 5 cm galangal
Steps:
- Peeled and cut into cup the potatoes, fried into golden brown, remove and drain it
- Boil the chicken liver and gizzard around 15 minutes, remove till cool, cut into cube
- Mashed the shallot, garlic, candlenut, kencur, galangal and ginger into mix well
- Heat vegetable oil with medium heat add the ground spices stir till fragrant, add lemongrass, bays leaf, lemon leaf, add water
- After the spice combine well, and the water reduce add block chicken broth, stir again
- Add green chicken liver and gizzard, chili and petai
- Add coconut milk, stir till reduce
- Add fried potatoes, sugar, and salt
- Stir till the spices reduce mixed well into potatoes
- Sambal goreng kentang is ready to serve
