Indonesian Salad Recipe : Cooked Vegetable with Spicy Grated Coconut - Resep Urap Urap

Cooked vegetables mixed with spicy grated coconut, it called urap – urap in Javanese and Lawar in Balinese. In East Java, Indonesia, it usually served as a side dish with Chicken Lodho. As the characteristics of East Java Food, of course it is spicy. You would never met a non spicy food in East Java.

In Java, the more you get to west region, the more sweet food you get. But the more you get to east region, the more spicy food you get. Chicken Lodho as the main dish with cooked vegetables mixed with spicy grated also a spicy food, but the strong taste of curry would play through your tongue.

This kind of food is very suitable for vegetarian, it contains absolutely a full package of vegetables. The taste is a little bit spicy and crunchy because of beans sprout. Here are the recipes of Urap Urap, Indonesian Salad through generations.




INGREDIENT:
  • 100 gram long beans
  • 100 gram cabbage, shredded
  • 100 gram spinach
  • 100 gram kale
  • 100 gram sprout
  • 300 gram fresh grated coconut

SPICE PASTE:
  • 4 cloves of garlic
  • 5 red chilies
  • ½ teaspoon coriander (grilled)
  • 2 centimeters kencur
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • 3 slices of lime leaves

STEPS:

  • Grill or blend all spice until the texture is like a paste
  • Grilled all spice paste with grated coconut thoroughly mixed
  • Cook all the vegetable till set side and cool them all
  • And the last mix all vegetables and spicy grated coconut

A very easy serve food. If you like to eat crunchier, don’t cook the veggies too long or you will lose the texture of fresh vegetables. In Indonesia, it served in afternoon with some of iced tea. Yummy imagine the taste of spicy grated coconut.
